Windstar Stretch Brings New Anthony Sasso Restaurant

Windstar Cruises $250 Million Star Plus Initiative will stretch their three Star Class ships adding new suites, restaurants, a world-class spa and fitness center. Today we have details of one of those features, a new Anthony Sasso restaurant. But first, let’s review.

Each of Windstar’s Star Class ships will be cut in half and made 84 feet longer. We already know that extra length will bring the Star Grill by Steven Raichlen. The initiative will also bring a variety of suites and public spaces. Here is how that is done.

The new restaurant we are talking about today features the flavorful and varied cooking of Spain. Sasso’s plan will take familiar Spanish menu items and transform them into something different. My mother would have called this “doctoring it up”.

For example, seen on any decent Spanish menu is the Spanish tortilla from Madrid, made with potatoes, eggs, onions and olive oil. The Sasso version will add parsley crème fraiche and a potato chip gremolata. Mom would not have thought of this.

In an even bolder move, Sasso slaps around the traditional paella that combines arborio rice and seafood. At Cuadro 44 by Anthony Sasso, paella will be rolled into a ball-shaped croqueta and topped with nori panko crust, saffron sofrito, and chorizo aioli. Brilliant.

Cuadro 44 by Anthony Sasso will debut first on Star Breeze in May of 2020; followed by Star Legend in September of 2020, and Star Pride in December 2020.
